“My name is Rick Lilley & over the years I have been fortunate to travel extensively & meet many artisan winemakers & distillers alike. Although I have spent many years in the cellars & vineyards of California, my time abroad has been invaluable to my career in food & wine. Europe was a valuable experience. Traveling through France, Italy & Corsica, experiencing the history of wine, spirits, food & lifestyle is important to our project. There are many Old World ideas that make so much sense but many of us have never been exposed to them. Comte Cheese from Jura & Vin Jaune for instance. Apart the two can be unattractive to the palate but together they are a splendid match. Why is it that Syrah from the Northern Rhone pairs so well with grilled lamb chops but Shiraz from Australia over powers the lamb? Is it in the preparation? There are so many of these questions as well as tried & proven methods that were answered or shown to me. The time I spent in New Zealand was also an amazing experience. Such diversity within a country was something I will never forget. From the sea or the mountains, the wide range of food & wine pairings were drastic."
There is an abundance of high quality, well made wine & spirits available. Most likely you have never tasted many of them. We started our shop with the idea of bringing all of those ‘allocated’ items to our clients.
